Menu Plan for 5/22 - 5/28
Sunday - We are going to eat at friends house so i will give you a link for a good recipe i found online. Easy Turkey Chili
Monday - Venison Salisbury Steak, butter and herb pasta and green beans. Very easy to make. I just cook up the cubed venison steaks on medium heat in a skillet (seasoned with roasted garlic and herb seasoning) and then i simmer them in beef gravy. Serve with any sides you like.
Tuesday - Chicken and yellow rice. I like to boil my chicken and then shred it into the cooked rice. very easy and quick for our busy night.
Wednesday - Breakfast night! I am making pancakes for the kiddos and an omelet for me since I am supposed to be dieting. (=
Thursday - Spaghetti and meatballs. I have a busy night this night so I am making it simply and quick. jar sauce, noodles and frozen meatballs from a Publix sale a few weeks ago.
Friday - Pizza night!!
Saturday - Red fish and white rice. My husband is big into fishing and is always keeping my freezer stocked with red fish. I cook these fillets in the oven in a casserole dish with butter and roasted garlic and herb seasoning and then serve with white rice. A BIG hit in my house.

Menu Plan for 5/15 - 5/21
This week I am going to be running around crazy with sports with the kiddos so dinners are going to be easy and quick. So not many exciting things on the menu for this week.
Sunday- Monte Cristo with fries. (i miss our Bennigans so I thought I would give this recipe a try)
Monday- Roasted garlic and herb chicken breast with mashed potatoes, gravy and green beans. I just put olive oil in a casserole dish place chicken breast in it and coat with olive oil and then season with roasted garlic and herb seasoning. Tonight I am using boxed potatoes, it is easier and my kiddos like them.
Tuesday- Kraft Homestyle mac-n-cheese and hotdogs.
Wednesday- "Fend For Yourself Night" Wednesdays are our busiest night with sports so this is the night we eat left overs or heat up things like corndogs or chicken nuggets.
Thursday- Chicken Garlic Pasta - for this i just cook up some diced chicken in a large skillet with butter, boil up a box of Penne pasta, when both are done cooking i add the pasta to the chicken in skillet and add a container of Kraft Philladelphia Garlic cooking creme and cook on low for 10-15 minutes. Simple and good!
Friday- Pizza Night!! we always get ours from Sams Club. They make the pizza and all you have to do is go home and cook it. They are soooooo good.
Saturday - This Saturday we are going to be at the beach relaxing after a very busy week so dinner is usually whatever we can find when we get home. So I will just post a recipe for you to try. Crock Pot Pulled Pork

Thursday Nights Menu - Chicken Pasta Casserole
Chicken Pasta Casserole
I have been trying to cook more meals lately but with 2 picky kiddos and 1 that will eat just about anything it is kind of hard to make one meal that the entire family will eat. We also have very busy schedules with sports and gymnastics and everything else so any meal I make needs to be quick or one that I can make in the morning and just reheat at dinner time. I am going to try to post our menu on the days that we aren't just grabbing whatever is left over or quick heat. We call those nights "fend for yourself" night. The kiddos actually like those nights because that is when they get tuna fish on crackers or spaghettios. (=
Tonight we are having a chicken pasta casserole, a recipe that I got from my younger sister several years ago when I was out in Texas visiting. It is really simple and only takes a few minutes to prepare. My husband and kids love this meal.
Ingredients:
1-2 chicken breast (diced)
2 tbsp butter
1 box penne pasta (or whatever kind you prefer)
1 jar of spaghetti sauce
1 pkg shredded mozzarella cheese
Preheat oven to 375
Place 2 tbsp of butter in skillet on medium heat and add chicken. cook until not pink. (season if desired, i usually use a roasted garlic seasoning)
Boil noodles according to package, drain and rinse.
In a large casserole dish add noodles, chicken and spaghetti sauce and mix.
Top with shredded mozzarella cheese.
Bake in oven 20 - 25 minutes.
I usually serve this with garlic bread or rolls and butter.
See really simple and quick. You can even prepare it all early and bake it later when you are ready to eat. This can also be frozen in an aluminum pan (before baking) tightly wrapped.
