Holiday Freezer Baking

I was so happy when Halloween was over because that meant I could start getting some of my baking doen for the holidays.  We all know that this time of year can be very hectic and I just didnt see myself trying to bake while also trying to get my house clean (and kept that way).  I also like to have extra "treats" for any unexpected guests that may drop by.  So today I started my baking.  Let s just hope I can keep my 3 kiddos out of it. (=

First I went with Peanut Butter Cup Brownies.

These are so good, that I am going to have to control myself from sneaking into the freezer to steal some.  The recipe makes 40 mini brownies.  It is also a really easy recipe to make. My husband, who isnt a big sweets eater tried these and LOVED them.






Then on to my easiest recipe.  Peanut Butter Fudge.

The recipe only calls for 2 ingredients.  1 Jar of peanut butter and 1 jar of frosting.  You can use chocolate or vanilla, I chose vanilla.  I thought that they were going to be too rich for me, but once they harden, they are perfect.  These can also be eaten right out of the freezer. (dont ask how I know this).


Last but not least, Cinnamon Sugar Donut Muffins.

These were a HUGE hit. They have a cake texture but a donut taste.  Needless to say only half of them made into the freezer.  The kids were eating them as soon as they cooled enough to pop them in their mouths.





I have to say all three of these recipes were really easy and my freezer is now full of Holiday goodies. At least until I find I find another recipe to try!

Taking surveys to earn points and get rewards.

Home Made Simmering Potpourri Recipe


I have been looking for recipes to make my own simmering potpourri and decided to take from a few different ones and make my own.  This turned out so good, my house has smelled wonderful all weekend.

(These are the amounts i used for a small pot, adjust the amounts for larger pots)

1 Tsp cinnamon
1 Tsp ground nutmeg
1-2 Tsp whole cloves
4 cinnamon sticks (broken into smaller pieces)
5-6 slices orange
5-6 slices lemon
2 cups water (more will need to be added as it simmers)

Put all ingredients in a small pot and let simmer for as long as you like.  Keep an eye on on the water level, it will start to go down after a long period of time.  I put mine on medium heat just to get it hot and then I let it simmer on lowest setting for about 2-3 hours and then turned it off. It still kept giving off an aroma while cooling off. I left mine on the stove over night and simmered it again the next morning and it still had just as nice of a scent the next day.  This is the perfect blend of scents for the holidays.  You can also change up the ingredients or amounts to your own liking. My entire house smelled wonderful!

My first "freezer cooking" weekend

I have been doing some reading on "freezer cooking" in order to help with hectic schedules and decided to give it a try.  With 3 kiddos that are in different sports and activities, I have been finding it harder and harder to find time to cook meals and have family dinners.  I decided to start off by spreading out my ideas of what to freeze into 3 afternoon/evenings. (unlike the "pro's" who get a week or more worth of meals done in 1 day.)

On day one I decided to start off simple and bought 4 packages of Martha White muffin mixes and cooked them all up with the "help" of my 7 year old daughter.  We decided to make these into mini muffins and I got about 75 mini's out of 4 pkgs.  I then made 3 dozen oatmeal raisin cookies from scratch.  I now have breakfast and snacks for their lunches for the next week. I then decided to make 2 family size Garlic & Herb chicken pasta meals.

                                                                                                           


Day two I made 2 meat loafs (not cooked, just prepped) and 16 breakfast burritos. For day three I made 15 "uncrustable" sandwiches and filled 15 water bottles with lemonade and tea for the kiddos lunches.  Now hopefully my mornings will be a little less hectic since i will only have to pack lunches instead of making them.  


My plan was to also make 2 French bread loaves but this was just a crazy, hectic weekend and I ran out of time and energy, but I hope to get a little more done this week while the kids are in school.

I had fun at Publix this morning because I had a friend (and fellow couponer) to shop with.  Sharing excitement over deals with someone who understands and enjoys it as much as I do (if not more) always makes grocery shopping a little more enjoyable. Had fun doing my CVS trip today, the cashier was new and was learning how rolling EB's works.  She was amazed at how much you can save.  I could have saved a few dollars more if I would have done 4 transactions but I didnt want to overwhelm her and other customers were starting to show up.  I was also surprised to learn that the newspaper I usually get went up a quarter in orice but it is still cheaper than other local papers.   I started this trip off with $7 EB's and $6.83 on a gift card. I went back to Publix to try and get some of the deals that came out with the new Yellow Advantage Buy Flyer and also to try and get more of the Puff w/ Vicks tissue.  I was unable to get the tissue this time (even though i was able to on Friday) because the manager said that they wouldnt be reimbursed because it is a Puffs product not a Vicks product.
